I have frozen cake up to two weeks before and it came out just as moist. Just make sure to wrap it in plastic wrap before you put it in the freezer. Some people suggest wrapping it in a paper bag to keep the freezer smell out but I never have. Frozen cake is also the best cake to carve.

- Make sure your cake is laying flat. If it is curved, it will freeze curved and may look warped when
you decorate it.
- Don't put anything on top of the cake until it is frozen for the same reason.
